Why Do Restaurants Leave Space Between Tables Even When They Could Add More?
Empty space can be one of the most profitable things in a dining room.
A restaurant could often fit more tables into the same room, but doing so can make the whole business weaker. Tables are not just revenue points. They are service units that require walking paths, privacy, acoustics, lighting and staff access. If tables are too close, servers move more slowly, guests hear each other too clearly and the dining room begins to feel compressed. The economics are a tradeoff between short-term capacity and long-term experience. More seats may increase possible revenue, but discomfort can reduce spending, shorten visits or prevent customers from returning. The behavior effect is immediate. People order differently when they feel watched, rushed or unable to speak freely. Empty space becomes part of the product because it gives diners room to relax. The second effect is reputational: spaciousness can signal quality even before food arrives. People think restaurants sell seats. Often, they sell the distance between seats.
